What you need:
3-4 tilapia fillets
Half a lime
Chard, Lettuce or any greens of your choice, finely chopped
1 Tomato, finely diced
Chives green onions, finely minced
Season tilapia fillets with salt and pepper. Chop lettuce and chives finely, and tomato in small cubes. Place all three in a glass dish. Drizzle olive oil, squeeze lime, and add a pinch of salt over the salad and toss.
In a shallow baking dish, place tilapia fillets already seasoned with salt and pepper. Bake at 350° for 12 to 15 minutes, until tilapia flakes easily with a fork. You may choose to broil tilapia for 1-2 minutes for a golden look.
Remove tilapia and place it over the greens in glass dish. Drizzle olive oil over fish. Serves 2.
